The art of making pasta begins with the selection of the grain. Delallo has selected only the finest Italian whole wheat that has been organically grown and harvested throughout Italy. They carefully mill the whole grain to a consistency that is textured like a semolina pasta but with the whole grain benefits. The whole wheat flour is kneaded gently with cool spring water and extruded through bronze plates. These bronze plates are what give Delallo pasta its unique coarse texture that allows the sauce and the pasta to adhere to one another permitting their individual flavors to marry into a delectable palate.
